> Frangipane takes its name from a 16th-century nobleman known either as the Marquis Muzio Frangipani or Don Cesare Frangipani, who, while living in Paris, devised a perfume based on bitter almonds that was used for scenting the gloves of Louis XIII. This caught the imagination of the pastry cooks of the day, who created various pastry creams involving eggs, butter, flour and almonds which became known as frangipane.
